Fruit Salsa with Cinnamon Sugar Chips!


My kids have been in heaven! Fruit salad for after school snack yesterday and breakfast today!

The fruit salad is made up of any yummy fruit that you have on hand (all of the fruit in my salad was on sale this week!) Kiwis, Watermelon, Apples & Strawberries!!!!

The trick is to cut up your fruit very small so you can eat the salad with your cinnamon sugar chips!  The combination is to die for!

Here is what I did for the CINNAMON SUGAR CHIPS:

Placed a small amount of coconut oil on a heated frying pan. Placed a whole wheat tortilla shell and fried it for a minute or two on one side, then flipped it on the other. Sprinkled cinnamon and sucanat (unrefined sugar) on top.  Than rolled the tortilla over, in half to help melt the sugar.  Took it off the pan and cut it into triangles.

Seriously…we are loving this healthy snack in our home.  Super easy, simple and yummy! Perfect for all you whole food mommies out there!
