Veteran – Potatoes with Kale, Tomatoes & Avocado

 

This has been my go-to meal for probably the last 5 years.

As many of your know, I am a potato lover…and I consider myself a minimalist when it comes to recipes (super easy, quick & yummy). Thus, this recipe is perfect for me.

Potatoes with Kale, Tomatoes & Avocado

INGREDIENTS

2 Yukon Gold Potatoes, cooked, cooled and diced

Handful of Baby Kale

Handful of Cherry Tomatoes, cut in half

1/2 Avocado, diced

DIRECTIONS

Add diced potatoes to a warm skillet (I used a small amount of coconut oil for frying). Meanwhile, steam your kale for 5 minutes or so (until really green, and not too mushy). Fry the potatoes until browned.  Combine fried potatoes, steamed kale, tomatoes and avocado, mix lightly.

BONUS:  Pour Balsamic Vinaigrette on top, a little goes a long way (recipe found here).
