Right now the snow is coming down, and it doesn’t look like it will be stopping anytime soon.
This is the time when a warm bowl of freshly made soup is my favorite sort of “comfort food”.

I love the simplicity of a really good French Onion Soup. For this recipe I just went to Costco and bought the large bag of sweet onions – which are perfect for this soup. I also couldn’t resist their multi-grain bread baked fresh in the bakery 🙂
4 Large Sweet Onions, cut if half and sliced
2 TBS Earth Balance Butter
1 TBS coconut oil
6 cups of broth (I use water and then add veggie boullion paste seen below)
1 cup dry sherry, optional
salt and pepper to taste
In a large pan melt the butter and coconut oil and add the onions. Cook the onion on medium heat for 5 minutes, stirring frequently.
Add the broth, sherry and seasonings. Simmer for an additional 15 minutes.
