Newbie – Quick Breakfast Toast

It is still VERY cold outside in my neck of the woods and we are getting tired of the same old oats and quinoa breakfast ideas. This week I started whipping up this delightfully sweet breakfast and cannot get enough. The simplicity of it makes it all that much better!

For this breakfast I always use almond butter. When compared to peanut butter it ties in several areas, but almond butter is lower in saturated fat by half and higher in potassium, calcium, fiber, iron, vitamin E, magnesium, and cell-repairing phosphorus! Winner all day long. I also use cinnamon that is full of health benefits including regulating blood sugar, reduce arthritis pain, and bonus cinnamon holds promise for various neurodegenerative diseases, including: Alzheimer’s, Parkinson’s, MS, brain tumors, and meningitis. (according to research at The Cytokine Research Laboratory, Department of Experimental Therapeutics, The University of Texas.) Their research shows that cinnamon reduces chronic inflammation linked with these neurological disorders. Read more in the article linked below. I am not suggesting that toast with cinnamon is the cure, but any little bit can help! 

And finally, bananas are full of vitamins and minerals and  give an energy boost. They also are a great after workout snack, full of potassium. Some argue that the old adage should be change to “a banana a day keeps the doctor away” (to be safe make it an apple and a banana every day!) 

Now to the simple and crazy delicious breakfast idea. My kids all give this breakfast two thumbs up!

Quick Breakfast Toast

Ingredients:

1 piece whole wheat/grain bread

1-2 tbsp almond butter

1/2 ripe banana

cinnamon to taste (about 1 tsp)

Toast bread and spread with almond butter, sprinkle with cinnamon, and top with sliced bananas!

Serve with fresh fruit or a side of steal cut oats.
