So I have been running all day and dinner time came a little too fast. We had no leftovers and I really only had 30 minutes to make and eat dinner with the family. This meal literally took 2 minutes to make and my kids and husband ate it right up. I just pulled everything out of the fridge- put it together- warmed it up…and my meal was complete.
2-Minute Bean Roll-up
Whole wheat flour tortilla
Black beans
Salsa (I used a fresh chunky style we buy from the local market)
Avocado
Lime (squeezed on time)
