Today was a super busy day for me, but all I can think about is you guys! I received two very inspiring and motivating emails from our followers. It just makes me so happy to have the opportunity to share recipes and information with you all. I am so grateful that you are all open and willing to try new ideas. I also love that you understand that I am a mommy just like you trying to to the best that I can! I am just humbled and overwhelmed with gratitude…. THANK YOU ALL!
I got home from my long day just in time to get dinner ready for my sweet little family. My confession: We had had whole wheat pancakes! Yum. I have always been a big fan of breakfast for dinner, it feels somewhat rebellious and the kids thinks it awesome!
Now to the good stuff, another fun lunch box idea!
This lunch is a go-to for me and my kids. Something they love and I know they will eat. I understand that this is not a perfect meal, but I also understand that they have 2 or 3 other opportunities throughout the day to get nutrient dense foods.
-1/2 tofurkey sandwich on whole wheat bread. (hint: most breads from the store say “whole wheat” or “whole grain”, but they is not entirely true. ALWAYS read the ingredients or make your own see recipe here)
I use veganaise, mustard, and top with spinach or lettuce. Top with your normal turkey sandwich toppings.
-Veggies with hummus. We have a great hummus recipe here or costco carries a brand we like “Sabra”.
– The treat: almonds and carob chips! They love the carob chips, you could even do semi sweet chocolate chips as long as it says “vegan” or “dairy free”.
