Last night between Valentines shopping and heading to Bikram yoga, I only had 30-40minutes to come up with dinner. I spent the day cleaning and not concerning myself with what I was going to make for dinner.
I looked through the cupboards stumped. I grabbed quinoa and pulled out some veggies to steam. I threw broccoli, asparagus, carrots, and brussel sprouts into my steamer and started boiling the quinoa (after thoroughly rinsing it). I figured we will just have a bland dinner and the kids will complain, but at least its healthy…. then the LIGHT BULB:
Quinoa Veggie Surprise:
1 cup quinoa rinsed (uncooked)
2 cups water
2TBSP veggie or chicken boulion
1 cup steamed and chopped broccoli
1 cup steamed at chopped carrots
1 can black beans drained and rinsed
Place quinoa, water, and boulion in a large pot. Bring to a boil. Boil for 15 minutes stir occasionally. Remove from heat and cover for 5 minutes. (steam the veggies while quinoa is cooking). Pour quinoa into a large bowl, add beans and veggies. Stir and serve warm or chilled. Feel free to add as many veggies to the mix as you would like. I take it easy when I am trying new dishes, I use the veggies my kids know and love.
The surprise:
**My eight year said, “this is the best family dinner ever!” then she quickly corrected herself with, “best HEALTHY family dinner ever!”
All of my kids ate without a complaint…. shock and awe! Simple yet full of nutrition. Give it a try!
