Veteran – Cashew Cream Kale

Making plain old steamed kale look yummy and appealing is hard enough, but making it taste really good can even be harder.  I hope this post accomplishes both.  Hopefully your eyes and your taste buds will be happy with this one.

As we all should know by now, Kale is the most nutrient dense food on the planet.  Thus, we should eat it often.  When I am in weight-loss mode, cleansing mode or just plain need a refresh, I try to eat a half a pound of kale daily.  And this is my favorite way:

Cashew Cream Kale

Here is the recipe for the sauce:

1 cup raw cashews

1 cup water (or you can use any non-dairy milk)

1/4 onion flakes

Blend all together in a high powered blender.  If you don’t have a high-powdered one, let you cashews soak for over an hour before blending.

I make this sauce and store it in my refrigerator to use during the week as needed.

I steam kale over my stove top for 5 minutes.

I rinse it with cold water (to stop the cooking process).

Squeeze the kale to get all of the liquid out.

Then drizzle the cashew sauce all over it, as little or as much as needed.

It’s surprisingly good! The best part about this recipe, 3 out of my 4 children eat it!

Give it a try…nothing fancy- but super nutrient dense!
