Newbie – Crock Pot Indian Curry

 Crock Pot Indian Curry

1 yellow onion

3 cloves of garlic

1 red pepper

1 can diced tomatoes with juice

1 14oz can coconut milk 

2 Tbsp curry seasoning

1 Tbsp masala (indian spice) 

Directions for sauce:

Combine all ingredients in a high powered blender or food processor and puree. 

2 potatoes, cubed

2 large carrots, sliced

1 large sweet potatoes, cubed

1 Cup chopped mushrooms

1 Cup chopped cauliflower


Pour sauce into crock pot on high. Add chopped veggies listed. Give or take any that you prefer. Cook on high for 4 hours. Serve warm over brown rice or quinoa. We ate this so fast last night I didn’t get a picture, but will be making it again very soon. 

Optional toppings:

Top with fresh chops cilantro to taste 

Lime for garnish, i love to squeeze a little juice on mine
