Maintenance – My Favorite Raw Corn Tortilla Chips

 

Unfortunately you do need a dehydrator for this recipe….sorry.  I have the 5 tray Excalibur that I love!!!

I love chips and salsa (and guacamole) but as we all know, chips just aren’t that good for you (sigh).  But don’t worry, this guile-free recipe will have not missing a beat.  It is a little labor intensive I admit, but one batch will last for months in the pantry!

corn cut from 2 cobs of corn

1 cup of almonds, soaked overnight and drained

1 cup of ground flax seed

1 red pepper, seeds removed

1/2 sweet onion

juice from 1/2 a lime

1 tsp cumin

salt and pepper

All of the ingredients need to be run through a food processor (except the flax seed).  You can do this all together or do it in batches.  Once you have done this add all of the ingredients into a large bowl.  Add the ground flax seed and thoroughly stir together the mixture.

Spread the “dough” onto 2 Teflex sheets about 1/4inch thick.

Place in the dehydrator at 115 degrees and dry for 8-10 hours.  Flip in over and dry the other side for another 4-6 hours.

Store in an airtight container.
