This is one of my new FAVORITES!!! Seriously, you NEED to try this. It might be a little more work than your ordinary salad, but trust me…it’s WORTH it!
It wasn’t until recently that I started to develop my love for raw zucchini. For those of you who have yet to try it, I can see you turning your nose at it already. But honestly, it is NOT one of those eat-it-just-because-it-is-good-for-you-even-if-it-makes-you-gag kind of foods. With the right topping or dressing it really is super scrumptious. With it being zucchini season I have been on a little “zucchini kick” lately. There is something about the texture of zucchini “noodles” that I love. I stilled haven’t purchased a Spiralizer (the fun kitchen gadget that turns your zucchini into “noodles”) because I have a handy dandy SaladMaster that shreds the zucchini in seconds. But I certainly would recommend one!
I’ve had different green salads with pasta thrown in and I love the blending of the flavors and textures. So why not try it with zucchini instead of pasta. This recipe was inspired by one I saw on OhSheGlows.com. I made a few little tweaks and fell in LOVE! A few simple ingredients and Voila….deliciousness!
Gorgeously Green Salad
1 small zucchini, shredded or “sprialized” 🙂
1 red pepper, thinly sliced
1 cup of green peas
1 small head of romaine, thinly chopped
1 TBS of sesame seeds
1 TBS of hemp seeds
Combine the lettuce, peas, peppers and zucchini into a large salad bowl. Top with seeds and drizzle with the dressing.
Dressing
1 garlic clove
2 TBS fresh lime juice
2 TBS soy sauce
2 TBS water
2 TBS pure maple syrup (or other sweetener)
3 TBS peanut butter (preferably an all natural kind)
1/2 tablespoon toasted sesame oil
1 teaspoon freshly grated ginger
