Sunday is treat day at our house. After the long week and always busy weekend, Sunday is the day we spend the most down time together as a family. We read, play, and always make a treat! I recently saw a recipe for the “best” no bake cookies on pinterest, but when I read the ingredients I was so sad to see butter, milk, and white sugar. Lucky for my kiddos, the picture left me craving a no bake style treat. Yesterday I gathered random ingredients and I created these healthy no-bakes that will satisfy any craving, but won’t leave you feeling guilty. They are also PERFECT for a lunch box treat!
Yields 12-15 cookies (double or triple to have extra for freezing)
HEALTHY NO-BAKES
Ingredients:
1 cup rolled oats
1/2 cup chocolate chips; most semi sweet are dairy free, read ingredient list
3 Tbsp peanut butter; I use crunchy, but either type will work.
3 Tbsp almond butter (Heaping scoops)
2 Tbsp ground flax seeds
1/2 Tbsp coconut oil
1 Tbsp flax seeds
1 Tbsp sesame seeds
1 Tbsp hemp seeds
1 Tbsp chia seeds
1 tsp real vanilla *optional
Directions:
Combine all ingredients in a food processor or blender and blend until it forms a sticky dough (about 3-4 minutes). If it’s too dry, add more nut butter. If it’s too wet, add a little more oats. I like using my food processor because I can pulse and the choc chips and seeds stay chunky. A blender will work just as well. Scoop heaping tablespoon drops onto wax paper and place in fridge to set up quickly. If you can resist eating the whole batch, store extras in an air tight container in fridge or freezer in a freezer bag.
