Newbie – Family Dinner

    I have a wonderful sister who lives about 45 minutes from me.  (I have other wonderful sisters, but they live a lot farther away.) We have not be able to get together in months with the busy Holidays. I talked with her this past week and just said, “when can we get together, how about Sunday dinners once a month?” It was settled pretty quick, dinner at her house, something quick and simple that all the kiddos would enjoy (we each have four kids). We decided spaghetti, salad, bread, and some treats would do the trick. I think too often we get caught up in the details and effort of preparing healthy food, when really its not as much about the food as it is the company!

I showed up at her house with my bread and treats. She prepared the spaghetti and salad. When I took a peek at her sauce I was delighted to see the upgraded sauce! She is a smart gal so I wanted to share her trick with you!

   Can you tell what she did from the pic? She adds quinoa to a simple store bought jar of spaghetti sauce to give it that extra oomph! Hello, great idea when you are in a hurry and still want to pack in the nutrients! Big sisters are so smart!! This process can be even speedier if you keep cooked quinoa on hand in the fridge. I love to cook 2-4 cups of plain quinoa and just keep it stored in the fridge for quick access. You can add fruit, cinnamon, and plant-based milk for a hearty breakfast, top a salad with 1/2 cup to boost your protein and feel satisfied longer, or like pictured above, add 1 cup or two to your favorite spaghetti sauce!
