Maintenance – "Knockout" Kale Rice Bowl

Knockout Rice Bowl – Serves 2-4


 

This is a delectable dish that is loaded with foods powerful enough to help “knockout” disease.

With whole grains, vegetables, legumes (nature’s protein 🙂 and healthy fats it is a perfectly balanced meal to keep your body healthy and strong (as well as satisfied)

 

2 cups cooked brown rice

1 bunch of kale, stems removed and steamed for 4-5 minutes

1 red pepper, chopped

½ cup black beans

½ avocado

1 TBS balsamic vinegar

1 TBS olive oil

1 TBS soy sauce

Juice from ½ a lemon

Salt and pepper

 

Combine all of the ingredients into a large bowl.  It’s best when served warm but makes a great cool salad also.
