Newbie – Cucumber carrot Juice (its so GOOD!)

 I love my juicer! I am not an avid cleanser,but I love fresh veggie juice. I like to create new juices, sometimes I fail and have to choke them down, luckily I do not share those recipes with you! Last week, I succeeded and have found a new recipe that I LOVE! (and so do my kiddos!)

Before I share the recipe, I wanted to explain why carrots? I was recently reading how drinking raw carrot juice can benefit the skin, hair and eyes as well as internal organs. Carrots are full of vitamin A which aids in the reproduction, division of cells, bone growth, and promotes a healthy immune system. Carrots also contain Vitamin B6 known for helping manage metabolism and keep a healthy immune system. And lastly, another great benefit of carrots is Vitamin C, we all know that this vitamin helps keep our immune system healthy and can help aid int he healing process of any wound or ailment. I know that many veggies in their true whole form will have most of these great benefits I have listed, but carrot juice is so dang delicious and my kids will drink it. I might sound crazy, but I’d trust home made carrot (veggie) juice over vitamin supplements for my kiddos any day of the week! 

Carrots also mix well with other veggies and because they are sweet, they balance the flavor when juicing them with kale or other strong flavored veggies. They also taste great on their own. I have found that many local grocery stores carry large bags of organic carrots, something I had not noticed until recently. I guess they have been there quite a while, but I just wasn’t looking.

One more thing, a quick story. My daughter was sick a few days ago, home from school with a head and stomach ache. I busted out my handy juicer and let her sip fresh carrot juice all day. I know there could be a million other reasons she was up and raring to go the next morning, but if its okay with you, I am going to give that delicious carrot juice some of the credit! 

Carrot Cucumber Juice

Ingredients:

4 very large organic carrots (6 if they are smaller) wash em, not need to peel if they are organic

1 lemon quartered (it just seems to juice better when cut)

One large organic hot house cucumber, no need to peel.

Directions:

I juice them in the order listed above. The cucumber seems to help move any stuck carrot or lemon through the juicer. This should fill a quart jar. I recommend drinking it fairly quickly (but also, if you haven’t heard yet, chew it. I know that sounds strange, but if you “chew” the juice it actually helps your body absorb more of the nutrients. The digestion process starts in the mouth, saliva starts the break down process… and on and on. I love chatting, typing, or teaching this good stuff to any one who will listen, read, learn. 

Ps. Juicers are cheap and make a great Christmas gifts, drop a hint to Santa if you are still in need! 🙂
