If you are pinterest lover, you might have already seen and tried this delightful way to eat salad on the go. I am in love with it! This time of year the days seem to fly by, if I am not prepared in advance I will end up snacking on holiday treats the neighbors drop by ( major no-no for me)! This is the perfect solution to eat healthy even on the busiest of days! Make two or three in advance and store them in the fridge for a quick grab-n-go lunch.
I like to make my own balsamic vinegar dressing to put at the bottom of the jars. I plan for about 3-4 jar salads with this recipe:
2 tbsp Balsamic vinegar
1/2 tsp sea salt
1/2 tablespoon crushed garlic
1/4 cup olive oil
Directions: whisk together in a small bowl or place in a small glass jar with a lid and shake until well blended.
For the salad in a jar:
Place 1 or 2 tbsp of dressing in the bottom of a large glass mason jar that has a screw tight lid. Then add the veggies of your choice; tomatoes, broccoli, peppers, cauliflower, red onions, mushrooms, celery, radish, red or green cabbage. I like to add about 1/4 cup of brown rice or quinoa nor any of your favorite grains and add a few grapes for sweetness. Finally top with your greens of choice, I like spinach or romaine. As long as the lettuce does not touch the dressing, the salad will stay good in the fridge for the week!
Extra add ins: beans, nuts, seeds, fresh herbs, anything goes!
