Newbie – Fluffy whole wheat pancakes w/choc chips

This morning my kids did not have school, but they still LOVE to wake up before the sun and play! I went on a hot date with my love the night and was happily sleeping in and listening to my girls all play together. They all came in purposing breakfast ideas and trying to coax me out of bed. My oldest who will soon be ten, loves to cook and create so I suggested making pancakes. She got out all the ingredients and measuring cups herself (really it was to buy some time, a few more minutes snuggled in my bed). Then I got up and checked the clock, 7:45am… successful sleep in. Time to get creative with the kiddos, chocolate chip pancakes pancakes.

I was amazed at how willing and able my kids are at making their own breakfast. My oldest did everything on her own while the younger ones “helped” stir. These pancakes turned out fluffy and delish. The kids loved them. I will be the first to admit they are not a health food, but a healthier option to the fluffy white flour ones.

Fluffy Whole Wheat Pancakes w/chocolate chips

Ingredients:

1 1/4 cups whole wheat flour

3 1/4 tsp baking powder

1/4 tsp salt

1 1/4 cups plant milk (I used rice milk, any would work)

1 1/2 tbsp olive oil

1 tsp vanilla

optional:1/2 cup mini chocolate chips (semi sweet are usually vegan, check the labels)

Directions:

Spray griddle or pan with non-stick and heat to medium/high, depending on what you are using. Mix together dry ingredients. Add wet ingredients and blend well. Add chocolate chips last. Makes about 12 medium size pancakes.
