Thanks to my sweet neighbor- Jamie…I am writing you this blog 🙂 She let me borrow a computer mouse (since mine decided to die last night) so I can manuever through my computer. You don’t realize how much you depend on simple things until it’s are gone. Speaking of neighbors- this salad above was made for me by one of my other sweet neighbors- Melanie. She brought this to me right after I had my baby- and it hit the spot! It was the perfect meal for my taste buds. My husband kept getting annoyed because I was vocally showing how much I loved the salad after every bite.
If you are like my mother, and have so many cherry tomatoes in your garden- you don’t know what do to with them all…you have to try this recipe. I highly recommend it 🙂
Cherry Tomato Salad
Ingredients
1 pint cherry tomatoes cut in half
4 chopped green onions
1/2 cucumber chopped
3/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon orange zest
1 tablespoon olive oil (I only used half this and it worked great)
Directions
Mix all together and chill for an hour for best flavor. So good! Like candy good!
