Maintenance – Garden Fresh Quinoa Salad

Garden Fresh Quinoa Salad

4 cups cooked (and cooled) quinoa

1 cucumber, chopped

1 red pepper, chopped

2 tomatoes, chopped

2 green onions, finely sliced

1/2 cup parsley, coarsely chopped

3 TBS of fresh basil, finely chopped

Dressing:

5 TBS Balsamic vinegar

2 TBS olive oil

juice from 1/2 a lemon

1 clove of garlic, minced

salt and pepper to taste

Whisk the dressing together and pour over the salad.
