So I am almost in my 3rd trimester (YEAH!) This pregnancy seems to be going pretty fast…probably because I have 3 other kids running around and sometimes a crazy busy schedule. On days when I do not have that much time to make lunch…I have loved making this simple, delicious sandwich. Hopefully it will still sound good to me when the garden tomatoes are in season.
Avocado, Tomato Sandwich
Ingredients
1/2 avocado
1-2 tsp lemon juice
Salt
1 fresh medium sized tomato, sliced
2 slices whole grain bread
Directions
Mash up the avocado with a fork, add the lemon juice and salt to taste. Spread avocado over both pieces of bread (I like to toast mine slightly). Then slice up the tomato and place on top of avocado. It’s that simple 🙂
