Newbie – Penne pasta dish

 I am a big fan of fast, easy, and tasty meals. My nine year old helped me create this one.

Delish Penne dish

1 pkg  Whole Wheat Penne pasta

1/2 TBSP olive oil 

1 small onion finely chopped 

3 cloves of garlic minced

1 Red pepper finely chopped

2 carrots peeled and chopped

10-12 baby portabella mushrooms chopped 

1 jar of your fave organic spaghetti sauce

1 cup of frozen corn (canned corn works as well)

2-3 kale leaves chopped  (optional, but highly recommended!)

Cook pasta according to package. While the pasta is boiling, heat olive oil in large pan on medium. When oil is warm, add onions. Allow the onions to brown, then add garlic, carrots, pepper, and mushrooms. Cook for about 5-7 minutes, then add the whole jar of sauce and frozen corn to the veggie mixture (feel free to add or omit any veggies you would like). Stir in pasta and kale. Serve warm. 

I was surprised how quickly my kids devoured this meal, served with a large side of steamed broccoli! Hooray for another successful dinner.
