Maintenance – Kale Salad

Well today I started a month long detox program designed by my kinesiologist.  This will probably be one of the hardest cleanses I have ever done (and I’ll write more in depth about it later).  The plan has a VERY strict diet, and pretty much everything is off limits except for veggies and brown rice.

Anyway, my first day was successful and I even came up with a FABULOUS tasting recipe to share!  If you have never had raw kale and are a little skeptical, don’t worry, this recipe is DELICIOUS.  Honestly.  Go to the store right now and buy some kale, beets and carrots.  It will be worth the drive once you taste it, and you will feel like you took a defibrillator to your cells – they’ll be so full of energy!!

Kale Salad

2 bunches of kale, stems removed, coarsely chopped

2 carrots, grated

2 beets, steamed and chopped (then cooled)

1 TBS olive oil

1 TBS macademian nut oil (if you don’t have this, then just double the olive oil)

Juice from one lemon

2 tsp sea salt

The first step for this recipe is to cook the beets.  The quickest way is to scrub them and then put them whole into a presser cooker.  Mine were done in 25 minutes and then I easily pulled the skin off them and allowed them to cool before chopping them (more like julienne style). 

The next step is to massage the kale. Combine the kale, salt and lemon in a large bowl and begin massaging it with your hands.  I know it sounds crazy, but wash you hands and then go to town rubbing, caressing, ripping, pulling and massaging the kale.  It will take a few minutes, but the kale will start to wilt and begin to look a lot like steamed kale.  Then simply add the other ingredients, and voila – a super charged salad.
