I am all about quick meals and time savers, here are a few tips and recipes that I love!
YAMS! (sweet potatoes, the orange guys), I like to have them on hand at all times. I bake a few of them, chop them and keep them stored in my fridge for the week. Its fast and easy: Wash, wrap in foil, and place in the oven on 350 for about 40-50 minutes depending on the size. Then you can leave them whole, cube, or mush them. Keep them stored in the fridge until you are ready to use them (they taste good cold… at least I think so).
Quick recipes:
Sweet potato hash (currently, I eat a version of this almost daily for lunch!)
Wild rice and mushroom soup. this recipe it excellent with sweet potatoes thrown in. YUM.
I love to eat them as a quick side dish or snack. My kids will have them with any meal. They are sweet and delicious!
QUINOA! If you have not ventured here, please run to you nearest health food store or even some Costco stores carry quinoa grab a bag. We also have it available in our MARKETPLACE.
I love to cook three or four cups of quinoa and have it ready to go at a moments notice, (not that it even takes long to cook)! It comes in handy to top a bed of spinach with 1/2 cup and some fresh chopped veggies for a delightful lunch! Also a quick breakfast, intstead of cold cereal, my kids love quinoa with cinnamon and fresh chopped apples.
I like to have a few cups of plain quinoa and a cup or two of cilantro lime quinoa on hand. (this makes any salad taste amazing!)
A few favorite recipes:
Mango quinoa (or any fruit) Breakast
I usually just add random chopped veggie like pepper, carrots and a can a of rinsed black bean with some lime juice to a cup or two of quinoa for a fast dinner or lunch. Get to know quinoa, it will be your best friend!!
SOUP~ This time a year it’s so nice to have soup on hand. I cook a large batch and divide it into portions large enough to feed my family and freeze them.

I know that fresh is ALWAYS best, however I am also a realist and know that if I can prepare a few items ahead of time, it will help me and my family stay on track.
