We eat a lot of BEANS in our home. One of our favorite mid-day snacks is opening up a can of re-fried beans and eating them with chips, or in a tortilla shell. I wanted to add a little more variety to our dip the other day…make it more fun and flavorful…this recipe turned out so yummy!

Refried Beans with Chiles
INGREDIENTS
2 garlic cloves, minced
1/2 small onion, diced
Little oil for sauteing
2 cups cooked pinto beans (15 oz. can of beans)
1 4-ounce can chopped green chiles
1/2 tsp chile powder (optional- depending on if you want it more spicy)
1/2 tsp ground cumin
1/4 tsp sea salt
1 TBS lime juice
Chopped fresh cilantro for garnish
DIRECTIONS
Saute garlic and onion in small amount of oil over medium heat for about 3 minutes. Add beans and remaining ingredients except cilantro and saute for another 3-4 minutes. With the back of a wooden spoon, gently mash the beans to your desired consistency. Remove from heat, top with cilantro and serve. I enjoy beans as a side dish, stuffed into tacos and burritos, or served simply with brown rice, chopped tomato, lettuce and avocado.
