Veteran – Whole Grain Blender Waffles

We wanted to highlight one of our FAVORITE  breakfast recipes…a recipe that is quick, easy and completely plant based.  It is gluten-free, sugar- free and DAIRY-FREE.  What a great way to start out your day…and KIDS LOVE THEM!

 Whole Grain Blender Waffles 

 

2 cups water
4-8 dates chopped or 1 TBS concentrated apple juice
1 cup quick oats
¼ cup millet or cornmeal
¼ cup
flaxseed
¼ cup raw cashew nuts
1 TBS cornstarch
½ tsp salt

 

IDEAS for TOPPINGS
Thawed berries (strawberries, blueberries, raspberries, etc.)
Sliced fresh peaches
Grade B Maple Syrup (pure maple sugar- not made from corn syrup)

DIRECTIONS
Preheat waffle iron (Belgium Waffle iron works great). Blend all ingredients for 1 minute or until smooth (high powered blender is needed i.e. Vita-mix).  Let mixture sit for a few minutes to thicken if you have the time.  Pour mixture into preheated waffle iron and close the lid.  Bake until steam stops rising and the waffle is golden brown and crisp (anywhere from 5 to 10 minutes).  My belgium waffles maker makes the perfect waffles in 5 1/2 minutes.  Recipe makes approx. 8 Belgium waffles.
Serve immediately with desired toppings. Waffles can be refrigerated and reheated in toaster for up to 3 days or more.

 

 

WHIPPED CREAM TOPPING

 

 

Ingredients

1 cup water

2 TBS agar flakes (can be found at health food store- this is the thickening ingredient)

1/2 cup raw cashews

1/3 cup honey

1/2 teaspoon salt

1/2 teaspoon vanilla

1/2 teaspoon coconut extract

1/4 teaspoon xanthan gum (optional, but especially nice when using this recipe for icing)

1 can coconut milk (or two cups soy milk)

 

 

Directions

Stir together the agar and water in a small saucepan and bring to a boil, stirring constantly.  Reduce heat and simmer 1-2 minutes.  Place remaining ingredients in blender along with the hot agar mixture.  Blend on high until smooth.  Pour mixture into a quart container and chill several hours or overnight.  Then place mixture (which will be quite firm, almost sliceable) into your blender and blend until creamy.  Ready to serve as a FANTASTIC topping for these waffles and many yummy desserts.

 

This recipe needs to be made before hand…but it is so worth it.  I have tried many vegan “cream” recipes, and this is my favorite by far!
