Peanut Butter Banana Quesadilla

Oh YUM!


I have had a Quesadilla maker for years… dates back to when cheese was a staple at every meal… yikes!

I was going through my cupboards cleaning things out and debating getting rid of it, then a light bulb moment. 

That is how this yummy recipe was born:

 

Peanut Butter and Banana Quesadilla

 


 

 

What you will need:

 

2 whole wheat tortillas

2 TBSP of real peanut butter (check the ingredients, you will be surprised how many have SUGAR in them)

1 ripe banana

A little bit a vegan butter/margarine. I use Earth Balance.


If you do not have a quesadilla maker, you can make this on a frying pan on medium heat.

 

Spread peanut butter on both tortillas, slice banana either lengthwise or in little circles. If you are using a quesadilla maker, make sure the slice are thin. Place banana slices on one side and top with the other tortilla. Butter the outside. I like to butter one side, place it on the pan and butter the top side before closing the quesadilla maker. Brown both sides.

 

Slice and serve with maple syrup or eat on its own. Warming the bananas made the sweetness come out. My kids loved it! It will make a great addition to their lunchboxes!
