1 package of Gardein “Chick’n Scallopini”
1 ½ cups seedless grapes
1 cup of celery, finely chopped
1/3 cup green onions, chopped
½ cup slivered almonds
¾ cup Veganaise
½ tsp ginger (freshly grated is ideal)
(optional – a dash of dill tastes great)
4 Whole Wheat Pita Pockets
Lettuce for garnish
Cook the Gardein fillets according to the package directions (which only takes a few minutes). Allow them to cool and then cut into bite-size cubes. Combine the ‘chicken’ with the rest of the ingredients. Allow the salad to chill in the refrigerator for about 30 minutes to blend the flavors. To serve, divide the salad evenly into 4 Pita Pockets and garnish with Lettuce leaves or spinach.
