TIFFANY’S WALDORF SALAD
1 Apple
2 C. red grapes
3 celery sticks
3/4 C chopped walnuts
2 TBSP veganaise
4 green onions
1 avocado (optional, – a great source of good fats)
1 can of black beans drained and rinsed
salt and pepper to taste
Finely chop all ingredients and mix in together. Add avocado last so it doesn’t get all mushy in the mixture. Scoop into a whole wheat pita with spinach or romaine lettuce and enjoy!
