Newbie – Summer Salad for kids

        It had been a few days since we have had a (nutritionally) great  dinner. I knew I had to step it up, but I didn’t want to have whining and complaining at the dinner table tonight so I came up with this simple solution.

Create your own salad:

            I put the power in their hands! They each had to choose at least two toppings for the salad. Tonight I had grabbed whatever I had on hand. You could use a wide a variety of things: strawberries, blueberries, avocados, peppers, chives cauliflower, nuts and seeds… anything goes!  My base salad was spinach  mixed with chopped broccoli and about two TBSP of dressing. I piled that on their plates and they got to pick what they wanted. It worked like a charm! They ate up there salads with no complaints. I served them with a side of seasoned unfried fries which helped them forget they were eating a healthy dinner! Loving summertime!
