Newbie – Happy Holiday Season (recipe)

   I hope everyone had a great weekend filled with family and friends. I know I have enjoyed  myself, maybe a little too much. I still have days (sometimes weeks) where I struggle to find that balance of eating well and not beating myself up over the little things. I’m a work in progress 🙂 This year I hosted Thanksgiving (as I do most years) I had big plans to go all vegan-ish, maybe even try the tofurky….. I chickened (ha chicken) out. I had family members scared to eat at my house because of the weird food I might be serving!! It’s still funny to me that eating actual REAL food is some how scary, but opening a box of whatever with ingredients you cannot pronounce seems safer? How did our nation get so mixed up?  Anyhow back to my weekend,  I made a very tiny turkey, 4lb to be exact. It was great for the guests. I went with traditional sides adding a few extra green side dishes for myself. No one noticed that I didn’t eat the turkey and all was well.  Then the dessert.. pies pies pies and more pies with ice cream and of course whipped topping right …. wrong!! I made the BEST dessert, it was satisfying and no one complained! Hooray! 

 Orchard Delight

 

Crockpot 

8-10 Large apples (any type, a variety is best)

1/4 cup or less sugar

1-2 TBSP cinnamon

optional: our RAW granola  or any granola of your choice

 

Wash, core and chop the apples. Place them in a crockpot.  Sprinkle with sugar and cinnamon. 

Cover and cook:  4 hour high or 8 hours on low. Serve warm.

Sprinkle with granola and fresh chopped apples.  Serve warm with rice or soy vanilla ice cream! 

 

It was a hit at my house, I think some people topped it with caramel as well.
