I’m calling it a breakfast burrito even though we ate it for dinner:) I was talking on the phone with my sister, walking her through a butternut squash recipe while trying to come up with what I could make for dinner. It slowly evolved into this yummy meal. I just kept adding things until… viola!
I started with:
3 Baked potatoes cubed
1 red pepper chopped
1 sweet onion chopped
1 TBSP olive oil
1-2 TBSP season salt -to taste
1/2 bunch chopped Kale
4-6 whole wheat tortillas
Heat oil in pan on medium, then add onions and peppers, let them cook for a few minutes then add potatoes. Since the potatoes are pre-cooked it only takes a few minutes to get them crispy. Turn off the heat, place the chopped kale on the cooked veggies and cover with a lid for 2-3 minutes, this will steam the kale.
Next take the whole wheat tortilla and heat it in a dry pan on medium, both side for 1-2 minutes each side. This just makes the tortilla easy to handle. Scoop the veggie mixture onto the middle of the tortillas and top with avocado, tofutti sour cream, and fresh salsa. Roll it up and ENJOY!
I overloaded mine(below) a bit, but it was a delicious success, even my kids loved it!! A new staple in our house! YUM!
