Cilantro Lime Quinoa
1 cup quinoa, cooked according to package (Optional: cook in vegetable or chicken-faux stock for more flavor) Cooled to room temperature
1/2 bunch fresh cilantro, chopped finely
1 TBS Olive Oil (optional)
Juice of 1 lime
Salt and freshly ground black pepper to taste
Place all ingredients in a medium bowl and toss to combine.
Use as a delicious side dish, a excellant addition to any salad or as a filling for Bean Burritos.
