Maintenance – Mango Quinoa Breakfast

This is a very quick, easy, nutritious and DELICIOUS breakfast.  The perfect way to start your day.  When I make quinoa

I usually make a big batch so that I always have some in my fridge or freezer.  This is a great way to use the leftovers.

1 cup cooked quinoa

1/2 rice or soy milk

1/2 packet of stevia sweetener

1 mango, chopped

cinnamon to taste

In a microwave safe bowl put in the quinoa and the milk.  I like to cover it with a glass plate to keep the steam in the bowl as

it warms up.  Microwave for 45 seconds.  Add the cinnamon, stevia and mango.  Voila and enjoy!
