White Bean Avocado Wrap

Lunch [L]


1 1/2 cups shredded cabbage (red or green)

1 medium carrot, shredded

1/2 cup shredded cucumber

2 chipotle chilies (in adobo sauce), minced

3 TBS chopped cilantro

2 TBS cider vinegar

1 tsp white vinegar

1 TBS olive oil

Mix all these together.  The chilies make it quite spicy, so you could

always add a little honey to it.

1 can white beans, drained

1 avocado, chopped

Mash beans and avocado together and then spread on a whole

wheat tortilla.  Add the cole slaw and then roll-up. Enjoy!
