Hopefully you have tried one of our most popular recipes: Cilantro Lime Quinoa. Well, for all of you who love this recipe as much as we do...here is an even BETTER CILANTRO LIME QUINOA.
I made this tonight for my children. They all love Cafe Rio rice, but I just hate that it is WHITE. And when I have made it with brown rice, they are full of complaints. So, tonight I made it with quinoa...and it was a huge hit! This recipe is SO good! This will replace my other recipe in my home. I love using this recipe over a bed of greens or mixed into a vegetable soup for an added TANG of lime. Or you can just eat it plain. My kids love it with black beans and chips.
Cilantro Lime Quinoa (even better!)
1 cup quinoa, rinsed
1 TBS olive oil or butter (optional)
2 cups water
2 teaspoons Vegetable or No Chicken paste (Better Than Bouillon brand is good)
1/3 cilantro, chopped finely (1/2 bunch)
Zest of 2 small limes
Juice of 2 small limes
1/2 teaspoon Salt
First mix the WATER, Paste, Zest, Lime Juice, Cilantro and Salt in a bowl. (I like to use HOT water, so the paste starts to dissolve).
Place Quinoa in oil or melted butter in a large saucepan on medium high heat. Saute the quinoa for about 1-2 minutes, until hot. Then add the water mixture slowly (it will steam). Turn to HIGH until it begins to boil, then cover and turn to LOW for 20 minutes. Turn the stove off, fluff with fork and cover again for 5 minutes.
This recipe makes for a very "limey" quinoa, but that is what we love. We usually add this to another recipe, so the LIME adds a special tang. If you are eating this plain, I would recommend 1 lime, instead of 2.
