      This has been my go-to meal for probably the last 5 years.

      As many of your know, I am a potato lover...and I consider myself a minimalist when it comes to recipes (super easy, quick & yummy). Thus, this recipe is perfect for me.

       

      Potatoes with Kale, Tomatoes & Avocado

       

       

      INGREDIENTS

      2 Yukon Gold Potatoes, cooked, cooled and diced

      Handful of Baby Kale

      Handful of Cherry Tomatoes, cut in half

      1/2 Avocado, diced

       

      DIRECTIONS

      Add diced potatoes to a warm skillet (I used a small amount of coconut oil for frying). Meanwhile, steam your kale for 5 minutes or so (until really green, and not too mushy). Fry the potatoes until browned.  Combine fried potatoes, steamed kale, tomatoes and avocado, mix lightly.

       

      BONUS:  Pour Balsamic Vinaigrette on top, a little goes a long way (recipe found here).

      • Are the potatoes cooked before you fry them in the skillet? The recipe seems to indicate that they are, but you don't say how to cook them first. Boil, bake, steam, other?
