      This is what my sweet children made for me on Mother's Day

      (Daddy helped with the strawberry hearts).

      This is one of our MOST Popular recipes:  Whole Grain Blender Waffles.

       

      Before I show you what wonderful ingredients are in the recipe,

      I first want to tell you what's not:

      This recipe is Sugar-Free, Gluten-Free, Dairy-Free, Egg-Free, Oil-Free and Processed Flour Free.

      Even with all this "free" stuff, they taste amazing!

       

      Whole Grain Blender Waffles

      Ingredients

      2 cups water

      2-3 Medjool Dates or 4-5 regular dates

      1 cup quick oats

      ¼ cup millet

      ¼ cup flax seed

      ¼ cup raw cashew nuts

      2 TBS cornstarch

      ½ tsp salt

       

      Directions

      Place all ingredients into your high-powered blender and blend until smooth.  Let sit on counter for 2-3 minutes which helps the mixture to set up.  Pour mixture into waffle iron and cook for about 5-6 minutes, until cooked through-out.

       

      Fresh fruit and maple syrup work for great toppings.  As well as Whipped Coconut Cream with vanilla (recipe below).

       

      Whipped Coconut Cream

      Place 1-2 cans of Coconut Milk in your refrigerator overnight.  In the morning, take them out of the fridge carefully without tipping or shaking.  Open the can and skim the "cream" off of the top.  Scoop out everything until you hit the water.  Place this "cream" into a bowl and add vanilla and if you would like it sweeter (my kids often do), you can add a little sweetener (stevia, honey, brown rice syrup, sugar, etc.)

      Whip everything together using an electric beater for 2-3 minutes, until the cream has thickened well.  You can keep this in your refrigerator for about a week.  Makes for super yummy breakfasts!

       

       

      Seriously, these waffles with the berries and cream are one of my favorite breakfasts!

       

      I love refrigerating or freezing the waffles in individual baggies and toasting them the next morning (takes a few minutes in toaster- but works great!)

      p.s.

      I am spoiled when it comes to the waffle iron!  I own the Calphalon Waffle Iron...it beeps when the waffle is done!  Oh- I love this machine so much!  We make these waffles at our house often, so it was worth the price!

      • I LOVE these waffles! I wasn't sure if they were going to be good or not. Millet isn't my favorite grain. When I tried them they were some of the best waffles I have ever had- vegan or not! Crispy on the outside, subtly sweet...delicious! Thanks for sharing.
