    •        Every now and again I get a craving for something sweet late at night (my midnight is usually around 9pm). Last night was one of those nights when I just NEEDED something sweet, I almost begged my husband to go grab something from the nearest grocery store... I knew if I sent him I would end up eating something I would regret so I looked around the kitchen, I was fresh out of dark chocolate. Plan B... 


      Fruit Sorbet


      1 cup frozen mangos

      1 cup frozen strawberries

      1/2 to 1 cup plant milk

      1 -2 tsp vanilla

       

      Blend in a high powered blender and enjoy... no really ENJOY it! This little dish of frozen goodness satisfied my sweet craving and I went to bed guilt free! 

       

       *This is simple enough that you can easily swap out the frozen fruit for whatever you prefer and adjust the amount milk depending on the consistency that you desire.

    •  A highlight of one of my absolute favorite summer salads!


                Mango Salad

       

       

      1 chopped tomato


      1 chopped cucumber (peeled if needed)


      1 chopped avocado


      1/2 chopped red onion


      1 chopped pepper (any color)


      2 TBSP lemon juice


      2-3 cups chopped mixed salad greens


      4 cups COOKED and cooled quinoa



      Topping:


      1 cup fresh chopped cilantro


      1 mango chopped


      1 cup chopped jicama



      Mix tomato, cucumber, red onion, avocado, pepper with lemon juice and sprinkle with sea salt.

      Divide onto 4 plates and top each with one cup quinoa. Then add cilantro, mango, and jicama.

       Enjoy with your choice of dressing, mango lime or  creamy tomatillo dressing.

       

      MANGO LIME DRESSING:

      1 cup fresh mango

      1/2 cup safflower oil

      1/4 cup agave nectar ( or maple syrup)

      1/4 cup lime juice

      1 TBSP rice vinegar (or balsamic)

      1 tsp fresh grated ginger

      2 tsp sea salt

      1 clove of garlic


      Place all ingredients in a blender and puree.

    •  Today I read two article about the food world that I thought were worth sharing. One is exciting and the other not so much...

       

      First the BAD:  

      There was an article posted in the Wall Street Journal today about Test Tube BEEF! The "beef" is grown in a lab and colored with beet juice (the only positive part). This is the science world approach to the handling the effect of beef production on the planet. I would think saving the $330K per patty and eating some greens could have the same effect?

      "The cultured beef, composed of muscle cells, was grown in the lab by harvesting a sample of muscle tissue from a cow. The tissue was then cut into small pieces and separated into fat and muscle cells. The individual muscle-specific stem cells were then grown in the shape of a ring and cut so they formed strands. These strands were layered to formed sheets of tissue to get the consistency of beef."

       

      MMMMMMmmmmm.. right? Not really! How would you like to be the one taking the first bite? Who knows what side effects that might have on your body! YIKES!

       

      They state that it will be a decade or two before its out on the market... let's keep our eye on that one!


      Now for the GOOD:

      Bill Clinton out spreading the word on eating plants! He proudly talks about how his diet has changed and what he is doing to stay on top of it. I know we can all say,  the lucky guy has his own chef... wouldn't we all love that, but his diet is simple, I loved reading his sample meals, we can all do that and keep up our plant-based diet. Reading through his article gave me a boost of energy and motivation to stay on track. He even gives a sample of what he eats in a day in this quite from the article:

       

      "For Bill Clinton, breakfast is almost always an almond-milk smoothie, blended with fresh berries, nondairy protein powder and a chunk of ice. Lunch is usually some combo of green salad and beans. He snacks on nuts — "those are good fats" — or hummus with raw vegetables, while dinner often includes quinoa, the Incan super-grain, or sometimes a veggie burger.  "

       

      He also offers some great advice to anyone wanting to switch their diet:

       

      " "I would keep a record of everything I ate every day — what, when and how much. That's easy for everybody to do. Just go write it down. And then I'd start looking at it and say, what am I going to give up and what am I going to substitute?"
