    • Ode to the CUCUMBER

    • As many of my friends know...I love ENGLISH CUCUMBERS!

      And I eat them how I believe everyone should eat them, Like an apple- PEAL AND ALL.

      On most days I usually have a long green cucumber in my purse, and when I'm hungry- I whip it out and enjoy a healthy GREEN snack.

      Even though this snack has become so normal for me...I still get surprised when people make comments about how WEIRD it looks.  I look back at all the different places I have eaten of it's goodness and it brings a smile to my face.

       

      Here is me eating my favorite GREEN snack at an event WHOLE FOOD MOMMIES participated in.  We were just setting up- and I whipped it out.  Newbie Mommy took this picture to capture the moment :)

       

      I was at my local children's museum the other day and me and my children were feeling hungry.  We went into a corner and  I whipped out my trusted cucumber and we all start munching on it's goodness.  Surprised that anyone noticed us in the corner...Within ten minutes, 3 different Mom's made comments on our little "cucumber show".  I think they were shocked at how my children were slightly fighting over the long green vegetable (it's because they were hungry- HUNGER is the BEST helper for kids and veggies!), as well as surprised how we were eating it.  I had to laugh at the whole thing.  I asked myself..."IS THIS WEIRD?"  The answer was...Of course...but who cares!  My kids are eating a vegetable...so I am happy!


      I love ENGLISH cucumbers because of their sweeter taste and their thin SKIN.  We go through a lot of these in our household.  I know they aren't the most nutrient dense vegetable...but they are vegetable and my kids eat it.  So I feel the JOY!!!

      We dedicate this POEM to all the cucumbers out there that have brought my family and I so much JOY!


       

      ODE to the Cucumber

       

       

      Cucumbers are GREEN and I love to be SEEN...

      Eating a Cucumber, that is long and green.

      Green is the BEST color, as you should know...

      Green helps you body and your skin to glow.

      Cucumbers when ripe are tangy and delicious,

      And without a doubt, they are very nutritious.

      They have Vitamin C and also five types of B,

      Iron, Zinc, and Potassium, to give you energy.

      So if you are hungry, WHEREVER you might be,

      Eat a CUCUMBER and you will see,

      Just how GREEN and YUMMY they can be!

    • Things that make me SMILE:

       

      1.  When my son eats something GREEN

       

       

      2.  Smelling and touching fresh GRASS...

      ...Wheatgrass (Maintenance Mommy gave me this...SO COOL!!!)

       

       

       

      3.  Hearty Spaghetti

       

      Hearty Sweet Potato Quinoa Marinara

       

      Ingredients

      28 ounce Stewed Tomatoes (I used my canned tomatoes- RECIPE found here)

      1 can diced tomatoes

      1 can tomato paste

      2 TBS Italian Seasoning

      1-2 tsp Garlic Powder

      1-2 TBS Sugar

      1 large Sweet Potato

      1 TBS Olive Oil

      1-2 tsp SALT

      1-2 cups cooked Cilantro Lime Quinoa (recipe here)

       


      Directions

      Combine both cans of tomatoes into a high powdered blender and blend until smooth.  Pour mixture into a large pan and add tomato paste and seasonings. Bring to a boil and let simmer on medium low while you cook the sweet potatoes.

      Dice the sweet potatoes into small pieces and coat with Olive Oil and salt.  Bake at 425 degrees for approximately 20 minutes or until tender.

      Combine the sweet potatoes and cooked quinoa into the tomato mixture.  Heat thoroughly and serve over your favorite whole grain pasta.  Add SALT to taste.

      Whole Food Mommy- Family Challenges


      My Children's attitude toward fresh produce has completely changed!  Because of the weekly challenges we are doing- Even my picky eater is consuming 4 times as many vegetables and fruits as he normally does!  No joke!

      Our family challenges come with a description of the challenge as well as a CHART to have your children mark off their own accomplishments.

      Not sure if all children are as competitive as mine- but my 2 oldest really enjoy winning...which makes for HEALTHY EATING in my home!


      I can't wait to share more in the next couple weeks!

      Whole Food Mommies will be at an event this weekend called:

      A CELEBRATION OF REAL BEAUTY.

       

      My good friend is putting this annual event together to celebrate the REAL beauty in women of all ages.  It is going to be a very uplifting event!  It will include a Real Beauty fashion show along with a photo-shoot.  There will also be a concert by Alex Boye!  We are so excited to be involved.

       

       

       

      We will be there in our WHOLE FOOD MOMMIES booth where we will have food samples and free recipes.  We will also be doing a cooking demo on stage that you don't want to miss!  Provided by our very own Maintenance Mommy- Charity Lighten!

       

      If you are in Utah...this event is taking place at Thanksgiving Point.
