      Thanks to my sweet neighbor- Jamie...I am writing you this blog :)  She let me borrow a computer mouse (since mine decided to die last night) so I can manuever through my computer.  You don't realize how much you depend on simple things until it's are gone.  Speaking of neighbors- this salad above was made for me by one of my other sweet neighbors- Melanie.  She brought this to me right after I had my baby- and it hit the spot!  It was the perfect meal for my taste buds.  My husband kept getting annoyed because I was vocally showing how much I loved the salad after every  bite.

      If you are like my mother, and have so many cherry tomatoes in your garden- you don't know what do to with them have to try this recipe.  I highly recommend it :)



      Cherry Tomato Salad



      1 pint cherry tomatoes cut in half

      4 chopped green onions

      1/2 cucumber chopped

      3/4 teaspoon salt

      1/4 teaspoon black pepper

      1 tablespoon orange zest

      1 tablespoon olive oil (I only used half this and it worked great)



      Mix all together and chill for an hour for best flavor.  So good!  Like candy good!

      So I happened to turn on the TV yesterday and the show THE DR.'s was on...I happened to hear one of the doctors say that laughing 15 minutes a day is good for your health.  He went on to say it burns calories and makes you live longer- and some other statistics that I really didn't listen to.


      I just heard LAUGHING FOR 15 MINUTES... and I thought to myself, "when was the last time I laughed really hard, out loud?"


      My kids were in the room with me- as I looked at each one of them I decided it would be fun for some family time.


      I decided...I was going to LAUGH for 15 minutes- and hopefully my children would join me.


      So I began...I just started fake laughing, really hard, really loud.

      And soon- my fake sounds turned into full out gut-laughing.   All of my children stopped what they were doing and stared.  My oldest (who is almost 8) immediately told me I was weird, but sat down and watch her mother in awe.  My handsome 5 year old I believe wanted to join me, but wasn't sure how- so instead just cuddled up beside me.  And my 2 year old little girl kept asking, "what's wrong?" and when I didn't answer she began to put her hand over my mouth.


      Just so you know...15 minutes is a LONG TIME to laugh, and unfortunately I didn't make it till the end.  But what I did make was a fun family experience.  And yes- maybe I am WEIRD...but I probably burned like 100 calories- so there!


      On another note, instead of looking for ways to burn calories to lose some weight...why not try this YUMMY CABBAGE SALAD- that is mostly RAW and so YUMMY!  This salad was made for me by a very sweet neighbor of mine who brought me dinner after I had my baby.  I ate almost the whole salad in one sitting- it was that good!  Thanks Kathryn for this awesome recipe!



      Cabbage Fruit Salad



      1/2 purple cabbage chopped

      2-3 apples chopped

      Craisins or Dried Blueberries

      Annie's Fat Free Mango Vinaigrette Dressing (few tablespoons)


      Mix everything together- using your desired amount of craisins or dried blueberries.  I would think that this would last a long time in your fridge, but it didn't last long in mine because I ate it so fast.

      And I don't know...maybe while you are eating can laugh a little bit- just for fun?

    • Perfect Summer Dinner

      First of all...doesn't this dinner look yummy?  It's an easy idea for a summer dinner.  This is what I craved during the end of my pregnancy- so we had it at least once a week.  I think my kids are addicted to fresh complaints here!  You can use sweet potatoes (check out our recipe here) and any type of salad.  I try to have a mixture of romaine and dark leafy greens (chopped small) always in my fridge. I love how quick and easy it is- and how much my kids love it! 


      And just for are 3 things you may not know about me (Veteran Mommy):


      1.  I LOVE Michael Jackson!  Ok..."love" might be too strong of a word for me...but not for a secret friend of mine.  I found this anonymous gift on my front door a week or so ago.  Ok- I admit that I enjoy a good MJ song to get me going.  I have been known to have spontaneous MJ dance parties in my kitchen with my children...but Michael Jackson as a person...not so much LOVE going on there.  So whoever you are...thank you for this GIFT- it puts a smile on my face every time I see it (and maybe a moonwalk for my feet- ha ha!)




      2.  Staying on the LOVE subject...I absolutely LOVE LOVE LOVE my little newborn baby!  I had my fourth child 2 weeks ago tomorrow.  Not knowing the gender beforehand, we had a very special moment when we met our son for the first time.  He weighed 9 lbs 13 oz (our biggest baby yet), I had him natural with not a single tear (sorry if that is "too much info").  He is a happy healthy baby and I can't stop holding him :)  I am excited to begin posting blogs on baby food...which is where I began my whole food plant based journey...when I had my first child and didn't know what to feed her.  Now I know...and I am excited to share!


      3.  And finally, the last item you may not know about me...I DO NOT LOVE writing blogs.  I try to write once a week...and I haven't been enjoying it at all lately.  As I am trying to figure out why...I thought I first need to admit that I don't like it at all (I would say HATE, but that is a "naughty" word in our home).  Do I feel inadequate?  Do I feel..."who am I?  And why would people want to hear from me?".  Or is blogging a WEAKNESS of mine that makes me feel this way?  Either way- as I thought about my dislike of writing, one of my favorite quotes came to mind:

      So all your WHOLE FOOD MOMMIES out there...I don't want to DISLIKE writing anymore- I want to enjoy it- maybe even EXCEL at it?  So bare with me- I'm going to get more personal and be more REAL.  And as my Michael would say (and being as cheesy as ever!!!) "If you wanna make the world a better place, take a look at yourself and make a change".
