    • Quinoa & Brown Rice w/Garlic

    • I found this product this week at Costco and thought I would like to try it.

       

       

      The ingredients looked pretty good (other than the sodium).  But it is made from whole grains and can be cooked in your microwave for 90 seconds.  It comes in a 2 cup serving...which I thought would work great for a quick lunch.  I made dinner with it last night for just me and the kids.  I ended up adding chunks of baked sweet potatos, some diced tomatoes and topped it with creamy cilantro dressing.  My oldest put it in a wrap and loved it!  Thought I would share!

    • WARNING:  There is an ingredient in this recipe that I usually don't use and don't recommend (RICE-A-RONI)... BUT- I had 15 minutes to make dinner the other day and I hadn't gone grocery shopping for over a week, and this is what I came up with using my food storage.  Definitely higher in sodium, fat and refined carbs...but by adding a lot of veggies- I didn't experience any guilt when most of my children gobbled it up :)

       

      Thought I would share :)

       

      Quick Mexican Rice

       

      Ingredients

      1 6.4 oz Package Rice-A-Roni Mexican Style Rice

      1 Red Pepper, diced

       

      15 oz bag of frozen mixed vegetables (mine contained: Carrots, Corn, Peas, Green Beans and Lima Beans)

      1 can (15 oz) black beans, drained, rinsed

      Top with Guacamole (optional)

       

      DIRECTIONS 

      In skillet, prepare the Rice-A Roni as the package instructs EXEMPT add the diced red peppers as you add the seasonings.  My package said to cook the Rice-A-Roni for 15-20 minutes.  So at the 13 minute mark, I took off the lid and added the 15 oz. of vegetables- mixed it all together.  I closed the lid and let is cook for 3 minutes.  So at the 16 minute mark I opened the lid again and added the black beans, and stirred everything together.  I then closed the lid for another 2 minutes.  Then I turned off the heat and served the mixture warm with tortilla chips and guacamole.  You could also serve this mixture in whole wheat tortillas and use vegan cheese and sour cream as a topping.

    • Tonight for dinner I made NACHOS...my family loved it!

       

      We basically had tortilla chips with refried beans, homemade salsa, shredded lettuce and mexican rice...but the part that made this meal a hit was the guacamole.  I got this recipe from a friend of mine- and it has become my favorite.  It doesn't take too long, and my kids devour it.

       

      Hope you enjoy!!

       

      Guacamole
      3 avocados, mashed
      1-2 limes, juiced
      1 tsp salt
      1/2 of an onion (I used red, but green onion is good too)
      1/4 cup chopped cilantro
      1 tomato, diced
      1-2 cloves minced garlic

      Mix all ingredients together.  It is better if chilled for about an hour.

    • Tomato Avocado Sandwich

    • So I am almost in my 3rd trimester (YEAH!)  This pregnancy seems to be going pretty fast...probably because I have 3 other kids running around and sometimes a crazy busy schedule.  On days when I do not have that much time to make lunch...I have loved making this simple, delicious sandwich.  Hopefully it will still sound good to me when the garden tomatoes are in season.

       

       

      Avocado, Tomato Sandwich

       

      Ingredients

      1/2 avocado

      1-2 tsp lemon juice

      Salt

      1 fresh medium sized tomato, sliced

      2 slices whole grain bread

       

      Directions

      Mash up the avocado with a fork, add the lemon juice and salt to taste.  Spread avocado over both pieces of bread (I like to toast mine slightly).  Then slice up the tomato and place on top of avocado.  It's that simple :)
