    • I wanted to give a shout-out to RIP ESSELTYN.  I was able to meet him at the Vegsource Healthy Lifestyle Expo earlier this month.  He is a stud!  I love hearing his story.  He is the son of Dr. Caldwell Esseltyn author of Prevent & Reverse Heart Disease.  He was an iron man triathlete (competed in the Hawaii Iron Man competition) and now he is a Texas fire fighter.   And best of all...he is VEGAN.   He helped and inspired his fellow firefighters to eat a plant-based diet which caused many of the men to loose weight and more importantly, they dramatically lowered their cholesterol.  He wrote the book:  The Engine 2 Diet which is based off his experiences with helping his comrades.

       

      He gave an amazing presentation that inspired all of us to TAKE IT TO THE NEXT LEVEL.

       

      The next level is different for every person.   But if you are striving to eat a more PLANT BASED diet...you are definitely at a different level then most people.  Can you do more?  How can you take it to the next level?  Who could use your help?

       

      Rip taught me that I can do more...even if it means that I have to go out of my comfort zone.  He has found his passion- and he is helping a lot of people.  He is an inspiring man.  Check out his website:  www.engine2diet.com.  It has such a cool tool called The Grocery List Builder- Check it out :)

       

      Your CHALLENGE:  Determine how YOU can take it to the next level...AND commit to do it!

       

      Some examples:  Feed your own family even better!  Let other's see your healthy choices- set a good example!  Have a potluck and invite your family/friends.  Cook some yummy healthy recipes to show them that healthy food can taste really good! Get involved and support a healthy food organization.  Teach a class.  Stand up for plant based nutrition...even if you get some funny looks.  If you believe in what you are doing- people will see that. Inspire others!

    • I believe having "HERO's" or "LEADER's" in my life is essential.  This means having people I look up to for answers- in all areas of my life.  "Leaders find the path.  They are the readers of the signs and the clues.  They see and show the way."

       

      This past weekend was a surreal and exciting time for me.  I was able to attend the Vegsource- HealthyLifestyle Expo in Woodland Hills California.  And YES- I met many of my "HEALTH HEROS".

       

      Caldwell Esselstyn Jr. MD  (the epitome of HEALTH and CLASS- the sweetest man!)

       

      Rip Esselstyn  (What a STUD!!!  I want to KNOW him- he has found his PASSION- and even though he doesn't have anything by his last name...he is going for it and will go far!  Very Dynamic!)

       

      Joel Fuhrman MD  (He is a GENIOUS!  Even though he is maybe 6 feet tall- he stands and appears as if he is the tallest man there.  He was amazing!)

       

      John McDougall MD  (He is an icon in this vegan world- it was fun to meet him and hear his ideas...exciting to learn more- looks amazing for his age)

       

      Jeff Novick MS RD LD LN  (HILARIOUS!  Entertaining!  Easy and logical- one of the best presenters there!)

       

      John Robbins  (THE ICON...It was a cool honor to hear him and meet him- he knows how to INSPIRE!)

       

      It was amazing!  These men are THE leaders in the Plant-Based World.  I learned wonderful and new insights, research, ideas & had some very fun experiences.  I will love sharing some of the information that I heard with all of you!

       

      Look up these men- find out what they teach...your life will change for the better!

       

      Now- if only T. Colin Campbell was there- it would have been complete!  Maybe next year :)

    • Here is a quick EYE-OPENING video about school lunches in our country.  I have loved finding more and more organizations that are identifying issues with school lunches and are making a difference.  The group that put this video together is all about using local produce for lunches in our schools.  How cool would that be?  To know exactly where my children't food is coming from- and to be able to help local farmers.  Check it out:  www.onetray.org

      ANSWER:  This is mechanically seperated chicken

       

      This photo below was extensively passed around the web last week, and for good reason: it's a peak into the rarely-seen world of mechanically separated meat, or Advanced Meat Recovery (AMR).

      The article states:

      Folks, this is mechanically separated chicken, an invention of the late 20th century. Someone figured out in the 1960's that meat processors can eek out a few more percent of profit from chickens, turkeys, pigs, and cows by scraping the bones 100% clean of meat. This is done by machines, not humans, by passing bones leftover after the initial cutting through a high pressure sieve. The paste you see in the picture above is the result.

      This paste goes on to become the main ingredient in many a hot dog, bologna, chicken nuggets, pepperoni, salami, jerky etc...

      The industry calls this method AMR - Advanced Meat Recovery.

    • Keeping things in BALANCE

    • Life as a mother is a wonderful privilege.  It definitely seems to have its ups and downs though.  It goes from ORDER to CHAOS far too quickly sometimes.  But it's comforting to know that it is on a cycle.  ORDER will come again just as sure as CHAOS will show its messy face.

       

      A women dear to my heart gave me great advice when I asked her how to keep my life in balance.  She said:  "Stand up and put both feet on the ground...NOW- walk forward."  As I began walking forward she told me to stop as soon as I had lifted one foot in the air.  "See" she said  "You are off balance.  When you move forward, you shift from one foot to another...off balance to balance, back to off balance again.  There is no such thing as constant BALANCE when you are moving forward in life.  You can't steer a parked car" she said.  "You need to always be moving forward.  BUT...remember, there will be times when there isn't BALANCE...when there is CHAOS....just do your best to keep moving."  And I would like to add to her wonderful advice...  AND DO YOUR BEST TO NOT FALL OVER!

       

      We all have times in our lives when we feel like we are falling over.  The responsibility of children seems to help in this stumbling effect.  But children also seem to help keep me walking.  I want my children to walk forward with me- and I know to do this an important element is their HEALTH.

       

      Today my daughter asked me why we don't eat pepperoni.  I told her frankly that it causes DISEASE.  My sweet and intelligent little girl said, "Thanks Mom!  My body doesn't like that stuff anyways."

       

      I find so much JOY in feeding my children real FOODS that promote real HEALTH.  Even though life sometimes is CRAZY and off balance- and I struggle with the effort it takes in preparing meals...I can't deny the feeling I have when my children EAT TO LIVE.  I am teaching my children that the DIET they are eating RIGHT NOW...in their YOUTH, will determine largely diseases they can have as adults.       I am not perfect...I actually have been stumbling a lot recently- but it's time for some ORDER in Veteran Mommy's household.  Wish me luck!
